SHMP is a white crystalline powder with a specific gravity of 2.484 (20 ℃). It is soluble in water but insoluble in organic solvents and has a strong hygroscopic function. It has significant chelating ability to metal ions Ca and Mg.

Application:
1. The main applications in food industry are as follows:
